Awesome Breakfast Casserole

Ingredients

1 12 oz. package Jimmy Dean 50% less fat Pork Sausage
2 cups shredded cheddar cheese (lowfat)
1 cup Heart Smart Bisquick mix
1/2 tsp salt
1/2 tsp pepper
2 cups skim milk
4 eggs
Directions
1. Brown sausage and drain.
2. Arrange cheese and sausage in bottom of a greased 9x13 pan
3. In separate bowl, beat milk, eggs, Bisquick, salt, and pepper, until smooth.
4. Pour mixture over cheese and sausage.
5. Bake at 400 degrees for 30-35 minutes, or until lightly browned.

We used italian turkey sausage, added mushrooms, finely chopped fresh spinach and 1/4 of an onion that was cooked with the sausage. We also did 1/2 egg beaters and 1/2 egg. I put this into muffin cups, and it made 24. We had 2 of these for breakfast and and now have bfast to go ready for others. - 2/28/09

I didn't have all cheddar so I used the package of mozarella and cheddar combo, I also added one medium can of mushrooms, one small can of green chilies and some onion ... it was delicious. Today I added diced tomatoes and am anxiously waiting for it to come out of the oven so I can try it. - 6/14/08

I don't use sausage so I substituted turkey pepperoni...Today, I am substituting with Oscar Mayer Ready to Eat bacon. My family loves it!! I did add onions and left out the salt. I think the cheese adds plenty and I use the coarse grind black pepper with a sprinkle (1/4 tsp.) of cayenne pepper!! - 1/18/09

I made this with a few variations to make it lower calories and larger portion sizes. I used 4 turkey sausage patties, 8 pieces of bacon and egg beaters in the place of the eggs. Making it this way has six servings instead of 12 and a whopping 278 calories!! It tastes great and suggest that you t - 1/4/10

Excellent! I added a carrot, onion and green pepper blend. I sauteed it prior to adding to the rest of the mixture. I cooked it for 25 minutes then turn off the stove and left it in for another 5. It was a winner this morning with my family, even with my 3 year old picky eater. He asked for seconds! - 8/11/12

This looks really good and I'm trying it tomorrow. I like the idea of turkey sausage, additional veggies and egg beaters and putting into muffin cups. I will come back and re-rate it. I'm back...sorry, I did not care for this. It was tough and not what I expected. I have to lower it a star. - 1/12/12

The first time I made this I added in all sorts of veggies and it came out wonderful! It's only me eating it though so after eating it 5 days in a row, I threw the rest out. I have my 2nd one in the oven now... I am going to try freezing the leftovers. I don't know how well that will work though. - 4/25/10
