1 small onion, chopped
1/2 cup bell pepper, chopped (red or green)
1/2 lb lean ground beef, browned and drained
1 15 oz can black beans, drained and rinsed
1 15 oz can tomatoes with roasted garlic and onion
1 8 oz can tomato sauce
3 C rice
1 1/2 tsp ground cumin
1 1/2 tsp chipotle chili powder
2 T fresh cilantro, chopped
6 oz reduced fat cream cheese
12 Azteca buritto size tortillas (140 cal/tortilla)
1 C shredded montery jack cheese
Return beef mixture to pan, add beans, tomatoes, tomato sauce, rice, seasonings, and cream cheese. Mix until well combined and cream cheese is melted.
Place approx. 1/2 C of filling and some monterey jack cheese in 10" tortilla, roll to make burrito
Serve with sour cream, salsa and guacamole if desired.
