Introduction

These muffins are packed with protein and potassium for those who are on the move , and still want a nutritional snack to keep them going. These muffins are packed with protein and potassium for those who are on the move , and still want a nutritional snack to keep them going.
Number of Servings: 18

Ingredients

    Banana ( 2 - mashed)
    1/4 cup chopped Peanuts
    1/2 low fat peanut butter
    1 cup Whole wheat flour
    1 cup All purpose flour
    1/2 cup Brown sugar ( packed)
    2 tsp ground flax seed
    1 tbsp Baking powder
    1/4 tsp salt
    1 cup "2 scoops raisin bran" cereal
    1/2 cup water
    1 cup Skim milk
    1/4 cup canola oil
    1/3 cup of Hershey's Chipits Mini Semi sweet choc chips

Directions

1 . In a large bowl combine egg, oil, water, milk, brown sugar,peanut butter and whisk to combine. Add bran cereal and let stand for 5 - 10 min. Add banana and mini -choc chips
2. Measure out your flours and baking powder and salt in another bowl, add chopped nuts and stir.
Line Muffin tins with paper cups and spray.
3. Combine flour with cereal mixture, being careful not to over mix.
Bake in preheated oven @400F /200C for 20 min.
