Introduction

I wanted a nice summer pasta salad so I found several chicken breasts in the freezer and a package of macaroni shells and the veggies that I had in the fridge and went to town. I I wanted a nice summer pasta salad so I found several chicken breasts in the freezer and a package of macaroni shells and the veggies that I had in the fridge and went to town. I
Number of Servings: 12

Ingredients

    3-4 boneless, skinless chicken breasts
    1 pkg. Macaroni shells
    1 stalk of brocolli chopped
    1.5 C of chopped celery
    1 medium onion chopped
    15-20 baby carrots chopped
    .75 C craisins
    .5 - 1 C Italian Salad Dressing (I used a Tuscan variety, there are lots of options here)

Directions

Poach chicken breasts and set aside to cool. Cook macaroni as directed on package and rinse with cold water. Cut up chicken and vegetables into bite sized pieces and toss in bowl with pasta. Add dressing to taste and sprinkle with craisins. It is best when it sits overnight.
