Introduction

An easy soup high in nutrients low in calories. An easy soup high in nutrients low in calories.
Number of Servings: 4

Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 1 clove
    Broccoli, fresh, 400 grams
    low salt veg stock cube, 1 serving
    boiled water, 1 litre

Directions

1. Chop onion roughly and Garlic finely.
2. Saute on a low heat in pan for about 4 mins, push tin foil down over it to stop it browning.
3. Cut end off stalk and disgard. Cut the rest ot the stalk into strips or cubes. Add to pan with stock.
4. After 5 mins add florets of broccoli and simmer for 5 mins.
5. Blend and serve.

Four 1.5cup servings
