1 12 oz can corn - drained
1 samm can green chilies - drained slightly
1/2 minced white onion
3 cloves mined garlic
1 1/2 oup grated low-fat cheese
1/2 cup skim milk
6-7 small tortillas
1 15 oz ca green enchilada sauce
Spray large glass casserole dish with non-stick cooking spray.
In non-stick skillet brown minced onion and garlic until translucent. Add drained corn, chilies and milk. Cook over medium heat until milk is absorbed.
While cooking corn mixture soften tortillas in microwave 25-30 seconds. Spread corn mixture over center of each t tortillas. Top corn mixture with heaping tablespoon of grated cheese. Roll up and place in prepared pan seam side down. Enchiladas should over lap slightly. Top enchiladas with enchilada sauce and remaining grated cheese.
Bake at 350 for 25 minutes.
