Spaghetti Squash Saute

Number of Servings: 4

Ingredients

    1/2 cup diced onion
    1 Tbsp. olive oil
    3 cloves garlic, minced
    2 plum tomatoes, seeded and diced
    5 jumbo black olives, sliced
    10 basil leaves, chopped
    1/4 cup herb seasoned feta cheese
    3 cups cooked spaghetti squash
    salt and pepper to taste

Directions

Sweat onion and garlic in the olive oil until onion is translucent. Add the squash, tomatoes, and olives and saute until heated through. Remove from the heat and stir in the basil, cheese, and salt and pepper to your taste.

Makes 4 servings of about 1 cup
