Huevos Ranchero

Introduction

Olive oil
1/2 medium onion, chopped (about a half cup)
1 15-ounce can whole tomatoes,(or 1 -2 large fresh vine-ripened tomatoes, when in season)
3 diced green Anaheim chiles
Chili powder
4 corn tortillas
Butter
4 fresh eggs
2 Tbsp fresh cilantro, chopped

2 Tbsp fresh cilantro, chopped

Ingredients

    Olive oil
    1/2 medium onion, chopped (about a half cup)
    1 15-ounce can whole tomatoes, preferably fire-roasted, if you can get it (or 1 -2 large fresh vine-ripened tomatoes, when in season)
    3 diced green Anaheim chiles
    Chili powder
    4 corn tortillas
    Butter
    4 fresh eggs
    2 Tbsp fresh cilantro, chopped

    Add olive oil and chopped onions in a cast iron skillet till onions become clear. Chop up the tomatoes and add to skillet. Next add the green chiles (roasted and peeled). Simmer about 10 min.

    While simmering, in another skillet add butter and gently cook the corn tortillas turning each so both sides are cooked (about 20 seconds on each side). Place two tortilla's on a plate. Fry two of the eggs and then place on top of tortillas. Add half of the salsa mixture. Repeat with other tortillas. Sprinkle with powder chile and add fresh cilantro.
