Number of Servings: 12

Ingredients

    1/4 c margarine
    1/4 c low fat ricotta
    1 egg
    2 egg whites
    1 scoop protein powder
    3 mashed bananas
    2 c whole wheat flour
    1/4 c flax seed (ground)
    1/4 c wheat germ
    1 t bakign soda
    1/2 t baking powder
    1/2 t salt

Directions

mix butter, cheese and sugar and apple sauce. add eggs and egg whites, beating until smooth. Add mashed bananas and protein powder.

Combine dry ingredients and add to wet. Mix and pour into 12 regular or 36 mini muffin cups. Bake at 350 for 30 to 40 minutes.
