Friesche Koek (Frischen Bread)

Ingredients

    Makes one loaf

    1 c. raisins soaked in 1 1/2 cups brewed coffee
    11/2 c. sugar
    1 egg white
    1 T. molasses
    1 T. salad oil (unsweetened applesauce)
    3 c. flour (2 white,1 whole wheat) (Also works with all white flour - in nutrition here mix as follows: 1 cup whole wheat flour, 1 cup light rye flour, half a cup oat flour and half a cup white flour)
    1 t. baking soda
    1 t. baking powder
    1 t. cinnamon
    1/2 t. nutmeg
    1/2 t. ground cloves

Directions

Beat together sugar and egg whites. Add molasses and applesauce. Combine all the dry ingredients in a second bowl. Add dry ingredients alternately with raisins and coffee to the first mixture.

350 degrees. 1 hour or until toothpick inserted in middle comes out clean. (This was the first time I made this in my new oven, and it took about an hour and fifteen). ~ Barb M., Holland, MI
