Porcupine Meatballs

Introduction

This recipe cooks up quickly in a pressure cooker. This recipe cooks up quickly in a pressure cooker.
Number of Servings: 3

Ingredients

    3/4 lbs very lean ground beef
    1 Tbs minced onion
    1/2 cup short grain rice (uncooked)
    1 cup tomato juice (spicy if desired)
    1/2 cup water
    1 small can tomato sauce

Directions


Combine beef, onion and rice in a bowl and mix. Shape into 12 meatballs. Mix water & juice in pressure cooker and bring to a boil. Drop meatballs into cooker and close lid. Cook for 15 minutes with pressure gently rocking. Let pressure drop on its own accord. Remove lid carefully and serve over hot rice.

Makes 3 servings of 4 meatballs each.
