Introduction

This recipe is the result of modifing others to make a waffle higher in protien and fiber for my family.

We like this waffle topped with berries or bananas and whipped topping!

Number of Servings: 6

Ingredients

    1/4 cup soy flour
    1/2 cup quick cooking rolled oats
    3/4 cup oat flour(or oats finely chopped)
    2 tablespoons finely chopped walnuts
    2 teaspoons baking powder
    1 1/4 cups non-fat milk
    1 tablespoon olive oil
    1 large egg

Directions

In a large bowl, mix together the flours, the oats, walnuts and baking powder. Set aside.

In a small bowl, whisk together the milk, oil and egg.

Pour the egg mixture into the dry ingredients and stir until just combined.

Pour 1 to 1 1/4 cups batter onto greased waffle baker. Follow directions for your waffle maker as to cooking times. Most waffles take about 5 minutes.

This recipie makes 3 cups of batter and should make 6 waffles in a standard size waffle maker.
