Mediterranean Style Pasta

Ingredients

1 16 oz box any style whole wheat pasta
2 pounds boneless, skinless chicken breasts cut into bite sized pieces
1 can large, pitted black olives (approx 20 olives)
2 cans diced tomatoes with italian seasonings
1 tbs olive oil
4-6 garlic cloves (depending on how much you like)
6 slices turkey bacon, cut into small pieces
4 tbs fresh chopped rosemary
1 package frozen or canned artichoke hearts
1 can hearts of palm
4 ounces fat free feta cheese
Directions
In a large pot, heat 1 tbs olive oil over medium heat
Add turkey bacon and cook until it begins to crisp
Add garlic and chicken breast. Season with salt and pepper if desired and saute until chicken is cooked through.
Add rosemary and both cans of tomatoes with the juice. Simmer for 20-25 minutes.
Cook the pasta until al dente, drain and set aside.
Add cooked pasta, olives, artichokes, hearts of palm, and feta to the chicken mixture. Stir well and allow everything to heat through. Serve immediately.
