"Spaghetti" with Sauce

Introduction

A great dish for a summer night when you don't want to spend much time in the kitchen, and definitely don't want to heat it up. No cooking required! A great dish for a summer night when you don't want to spend much time in the kitchen, and definitely don't want to heat it up. No cooking required!
Number of Servings: 6

Ingredients

    1 Spaghetti Squash
    6 sun-dried tomatoes
    about 1 1/2 cups of warm water


Directions

Place the tomatoes in a small bowl with water.
Halve the squash lengthwise and scoop out the seeds.
With a fork, scrap out the sides of the squash into a serving bowl.
Drain tomatoes, reserving 4 tablespoons of water. Place in blender, and blend until smooth.
Pour tomato sauce onto squash and mix well.

Goes great along side a salad.
Serves 6

If your tomatoes are not stored in olive oil, I imagine that you will need to replace 1 tablespoon of water with olive oil.
