Confetti Salad

Introduction

Number of Servings: 4

Ingredients

    10oz chicken breast (skinless)
    1/4 c carrot
    1/4 c onion chopped
    1 c cooked brown rice
    1/2 c niblets corn
    1/4 c peas
    1/4 c zucchini chopped
    1/4 c sliced red pepper
    2 tsp chives
    4 tsp olive oil
    1 pkg artifical sweetener (or 1 tsp brown sugar)
    1/6 tsp white pepper
    2 tblsp apple cider vinegar
    4 oz shredded Gouda cheese

Directions

Cook and cube chicken breast. Toss chicken, carrot, onion, rice, corn, peas, zucchini, red pepper & chives in a bowl.
Process olive oil, sweetener, pepper and apple cider vinegar in blend. Pour over salad - sprinkle Gouda cheese on top.
