Salsa & Bean Crockpot creation

Introduction

This is a simple to make, fix it and forget it meal. Tastes great, makes great lunch leftovers, and is easily customizable. I tend to use dried beans that I soak overnight, but you can use canned beans. Just remember to rinse them! This is a simple to make, fix it and forget it meal. Ingredients

    1 cup (or can) Pinto Beans
    1 cup (or can) Black Beans
    1 cup (or can) Red Kidney Beans
    1 cup lentils
    1 jar salsa (your choice on spiciness level)
    1-2 medium onions, chopped
    1 can of corn (rinsed) or half a bag of frozen corn
    Chili powder
    Black Pepper
    Garlic
    1-3 cups Water

    Optional:
    Shredded Cheese
    Tortilla chips

Directions

Place beans, lentils, onion, salsa, corn, spices (to taste) in the crock pot. I usually use about 4 tbls chili powder, 6 tbls garlic, and 4 tbls black pepper. If using uncooked beans, add 3 cups water. If using canned beans, use 1 cup water. Measurements don't have to be exact!

Place crockpot on low for about 6 hours (4-5 hours if using canned beans). Can be cooked up to 8 hours with no problems. The longer the beans cook, the softer they will be. I like mine to have a bit of a crunch still.

Serve with a sprinkling of shredded cheese and tortilla chips. Makes about 8 servings.
