Low Fat Banana Muffins

Introduction

Number of Servings: 12

Ingredients

    1 Cup All Purpose Flour
    1 Cup Whole Wheat Flour
    3/4 Cup Splenda
    2 tsp Baking Powder
    1/2 tsp Baking Soda
    Pinch of Salt
    1/2 tsp Cinnamon
    1/8 tsp Nutmeg
    1/4 Cup Canola Oil
    2/3 Cup Nonfat Milk
    1/4 Cup Egg Substitute
    1 tsp Vanilla
    2 Small Ripe Bananas, Mashed

Directions

Preheat oven to 350 degrees. Coat a muffin pan with cooking spray or liners.

Mash bananas and set aside.

Mix dry ingredients in large bowl. Make a well in the center.

Mix all wet ingredients in a medium bowl. Add wet ingredients to dry mixture, followed by bananas. Stir only to combine.

Fill muffin cups 2/3 full. Bake 18-22 minutes.

Optional Extras: 1/3 cup raisins, 1/2 cup mini chocolate chips.
