Introduction

This can be used as burrito filling, baked potato topping, eaten as is or added to a salad. I like to make burritos and freeze them to have on hand when we don't have lots of time or feel like cooking! I like to make burritos and freeze them to have on hand when we don't have lots of time or feel like cooking!
Number of Servings: 20

Ingredients

    1 - 15 oz can black beans
    1 - 15 oz can kidney beans
    1 lb ground turkey, browned
    1 lb shredded potatoes (hashbrowns)
    1 diced onion, optional
    1 taco seasoning packet

Directions

Brown ground turkey and then add taco seasoning mix according to pkg instructions. Mix browned, seasoned meat with potatoes, beans and onion. Use as you wish. I calculated the serving size as 2/3 C which gave me 20 servings approx.

* Can fill burrito shells, wrap and freeze, then microwave for 2 minutes when ready to eat.

* Can put on top of baked potato w/ salsa and a sprinkle of cheese.

* Can use as salad topping.

* Can top refrigerated tube of biscuits along with sprinkling of cheese and bake according to biscuit instructions.
