Chicken Casserole with Bacon and Mushroom

Introduction

Number of Servings: 4

Ingredients

    4 medium chicken thighs
    50 gram 97% fat free bacon
    1 medium onion sliced
    2 cups sliced fresh mushrooms
    2 med to large carrots sliced
    1 pkt Contintental French Onion Soup Salt Reduced
    1 garlic clove minced
    15 grams cornstarch (cornflour)
    1 1/2 cups water

Directions

Brown thighs in skillet, remove.
Add onions, garlic, bacon, carrots and mushrooms and saute for 5 minutes. Take off stove and add onion soup and water, then add drumsticks. Bring to the boil, cover and simmer for @25 mins until chicken is tender. Mix cornflour with a little water and add to casserole to thicken.
Serve with mashed potatoes and steamed vegetables.
