Bun Chay (Tofu and Mock Duck Salad)

Introduction

Ingredients

    1 cup rice noodles, prepared
    1/2 cup cucumber, julienne strips
    1/2 cup bean sprouts (fresh, raw)
    1/4 cup julienned carrot strips
    1 Tbsp fresh cilantro, chopped
    1 Tbsp fresh basil leaf, chopped
    1 Tbsp fresh mint leaves, chopped
    1/2 cup chopped Romaine lettuce
    1/4 cup Caramelized sweet onions (optional)
    1/4 cup tofu, cut into bite-sized strips
    1/4 cup canned braised seitan tidbits or mock duck, rinsed
    1 large wedge lime (about 1 Tbsp)
    1/4 cup vegetable broth
    1 Tbsp fish sauce
    red pepper flakes (optional)

Directions

Combine broth, fish sauce, juice of the lime, and red pepper flakes. Set aside.

Combine the rest of the ingredients in a large bowl. Add dressing to taste.

Yields 1 HUGE portion
