Multipurose sauce

I have used this over brown rice, chicken, pasta etc. I have used this over brown rice, chicken, pasta etc.Number of Servings: 6
Ingredients

2 TBSP Olive Oil
2 Cloves Garlic
2 Small Onions (sweet if possible)
2 Cans Rotel (your choice on the flavor)
1 6oz Can Tomato Paste
1 Yellow Bellpepper
Directions
Pour 2 tbsp olive oil in a large skillet, before heating crush 2 cloves of garlic into oil, Heat on med high when pour in the 2 onions and bellpepper you have already chopped turn heat down to med.
This is where this gets fun now look in you spice cubboard and use the spices you feel will go with what you are going to put this sauce over, come on experiment its fun.
Once the onions and peppers have softened pour in the 2 cans of rotel and tomato paste stir well bring to a light boil turn down to low and let simmer for 10 minutes or so.
spoon sauce over your favorite rice chicken etc, don't be afraid to try new things thats how I came up with this sauce.
