Red Beans and Rice

Ingredients

1 large onion, chopped
3 cloves garlic, smashed
3 ribs of celery, chopped
1 green pepper, chopped
1 red pepper, chopped
1-2 cups tomato juice or canned tomatoes
1 1/2 cups red beans or red kidney beans (1 19oz can)
1 tbsp Tabasco (or more)
cajun seasoning (or use chili powder, cumin, a bay leaf and oregano)
black pepper
**Note - if you want a less chunky version put tomatoes, celery, and peppers in blender when softened and then place back in pot with beans.
My DD loves this recipe - but won't eat it if she sees green peppers.
Directions
1. Cook onion, garlic, peppers and celery until soft. Use
your favourite low-fat cooking spray to saute' them, or braise
in water, stock or tomato juice.
2. Add tomatoes/juice and seasoning to taste. Simmer about 10 minutes.
3. Add beans. Simmer 5-10 minutes more. (My S.O. likes me to
simmer this until the beans start to disintegrate. Others may like
the beans firmer.)
4. Serve over cooked brown rice.
