A delicious way to start the day or a great afternoon snack. You can substitute splenda for the sugar and applesauce for the oil for an even healthier treat. Ingredients

    1 1/4 cups quick oats
    2/3 cup white flour
    1/3 cup whole wheat flour
    1/3 cup sugar
    1 tablespoon Baking Powder
    1/2 teaspoon salt
    1 cup skim milk
    1 egg
    1/4 cup oil
    1 cup blueberries

Directions

Combine dry ingredients in a bowl. Add in milk, egg, and oil and stir until just mixed. Add blueberries

Pour into prepared muffin cups and bake for 20-25 minutes at 425 degrees.
