Introduction

Number of Servings: 16

Ingredients

    3 oz. carob chips (or bittersweet chocolate works too)

    1/2 cup carrot puree

    1/2 cup spinach puree

    3/4 cup agave nectar (or natural sweetener)

    1/4 cup unsweetened cocoa powder

    2 taplespoons unsalted butter

    2 tablespoons vanilla extract

    1/3 cup egg substitute (egg beaters, etc)

    1/2 cup whole wheat flour

    2 scoops protein powder

    1/2 teaspoon baking powder

    1/2 teaspoon salt

Directions

-Preheat oven to 350 degrees. Coat 8x8 baking pan with cooking spray.

--Melt chocolate over low flame or in double-boiler. In a large bowl, combine melted chocolate, pureed vegetables, sweetener, cocoa powder, butter and vanilla. Whisk until smooth.


--Whisk in egg whites. Stir in flour, protein powder, baking powderand salt with a WOODEN SPOON.


--Pour batter into pan and bake for 35 to 40 minutes. Let cool completely! This is very important; if you eat them while warm you can taste the veggies! Cut into 16 pieces (four down, four across).
