2 ounces pancetta, diced
1 small onion
2 celery stalks
1 pound 99% lean ground turkey breast
1/3 cup Marsala
1 large can diced tomatoes
1/3 cup green lentils
1/2 cup water
14 oz whole grain pasta, cooked
Pulse onion, carrot, and celery in food processor until very finely chopped. Add the vegetable mixture to the same pan and cook until browned, about 15-20 minutes.
Add the Marsala, tomatoes, lentils and water and bring the pan to the boil. Add meat.
Simmer the ragu for 30 minutes stirring occasionally. Serve over pasta.
