Rapid Ragu

Introduction

Number of Servings: 6

Ingredients

    2 ounces pancetta, diced
    1 small onion
    2 carrots
    2 celery stalks
    1 pound 99% lean ground turkey breast
    1/3 cup Marsala
    1 large can diced tomatoes
    1/3 cup green lentils
    1/2 cup water
    14 oz whole grain pasta, cooked

Directions

In a medium-sized saucepan, saute the pancetta until beginning to crisp. Add turkey, breaking it up into pieces. Remove turkey and pancetta to a plate.


Pulse onion, carrot, and celery in food processor until very finely chopped. Add the vegetable mixture to the same pan and cook until browned, about 15-20 minutes.


Add the Marsala, tomatoes, lentils and water and bring the pan to the boil. Add meat.


Simmer the ragu for 30 minutes stirring occasionally. Serve over pasta.
