1 cup grated carrot 1 cup grated zucchini 1 large egg 0.25 cup whole wheat flour (or less) 0.25 cup feta cheese, crumbled 1 tbsp curry powder salt and pepper to taste
Mix wet ingredients. Add spices. Add enough of the flour so that the ingredients stick together. Form into patties in frying pan using spatula. Fry until brown, then flip and brown the other side. These freeze well after they have been cooked. Even my husband who is not a fan of veggies loves these!
