Ingredients

1- 3 1/2 to 4 lb. broiler - fryer chicken, cut up.
1 T. coconut oil
4 oz can mushrooms
3 small cloves garlic, minced
3 T. whole wheat flour
2 cups chicken broth
2 cups cucumbers
salt, to taste
1/2 cup fat free ricotta
1/2 cup buttermilk
Hot cooked rice
Directions
In a large skillet over medium heat, brown chicken in oil. Sprinkle with seasoned salt. Remove chicken to a kettle and set aside. Pour any oil left in the fry pan out and lightly saute' mushrooms and garlic for a couple of min. Meanwhile, blot as much oil as possible off of the browned chicken with a paper towel. Stir the flour into the mushrooms till they are coated, then slowly pour in the broth and cook and stir over medium heat till bubbly. Pour mixture into kettle with chicken and bring to a boil. Reduce heat ; cover and simmer for 30 minutes stirring occasionally. Meanwhile, peel cucumbers; slice into quarters lengthwilse and remove seeds. Cut into 1" pieces. Add to kettle and simmer for another 20 minutes or until juices run clear and cucumber is transparent. Add more salt if necessary. Blend fat free ricotta and buttermilk together till smooth and stir into chicken. Heat through but do not boil. Serve over cooked brown rice. Yield: 8 generous 1 cup servings
