Introduction

Ingredients

    1/2 cup Butter
    1/2 cup Canola oil
    1 3/4 cups sugar
    2 large eggs
    1 tsp vanilla extract
    1/2 cup lowfat buttermilk
    1 1/2 cups flour + 2 Tbs (unsifted)
    1/4 cup cocoa
    1 tsp baking soda
    1/2 tsp salt
    1/2 tsp nutmeg
    1/2 tsp cinnamon
    1 cup chocolate chips

Directions

Cream butter, oil, and sugar. Stir dry ingredients together with a whisk. Add eggs, vanilla and buttermilk to the creamed mixture. Slowly add the dry ingredients, then stir in the shredded zucchini and chocolate chips.
Pour into a greased and lined sheet cake pan and bake at 350 degrees F for 45 min.

Yield: 24, 2" x 2" x 1 1/2" servings
