Low Carb Jambalaya (with Chicken)

Ingredients

    2 tsp Promise Light margarine
    1 cup chopped onion
    1/3 cup chopped celery
    1/2 cup chopped green bell pepper
    2 cloves garlic, pressed
    2 skinless chicken breasts, cooked and chopped
    1/2 cup low sodium chicken broth
    1/2 tsp dried basil leaves
    1/2 tsp dried thyme leaves
    1/4 tsp pepper
    1/8 tsp Tabasco sauce
    1 bay leaf
    1 (14.5 oz) can diced tomatoes, undrained

Directions

Melt the margarine in a saucepan over medium high heat; add onion, celery, bell pepper and garlic, stirring frequently until onion is tender; add remaining ingredients.

Bring mixture to a boil, reduce heat, cover and simmer for 5 minutes; remove from heat and let stand for 10 minutes; remove bay leaf; serve.
