1/2 box of 14 oz whole grain spaghetti
1 can Italian diced tomatoes
1.5 tbsp olive oil
1 tbsp cider vinegar
1 64g can sliced olives
1/2 green bell pepper, chopped
1/2 cucumber, peeled, chopped
1/3 C chopped green onion
3 cloves pressed or minced garlic
Parmesan cheese (optional)
In the bowl you plan to serve/store your salad in, mix together: Can of tomatoes (mostly drained), olives (drained), olive oil, vinegar, green pepper, cucumber, garlic and onion. Mix in cooled spaghetti. Season to taste. Serve with or without Parmesan cheese. Makes 16, 1/2 C. servings.
