Vegenaise Coleslaw

Introduction

Coleslaw with a healthy non-mayo alternative Coleslaw with a healthy non-mayo alternative
Number of Servings: 8

Ingredients

    2 cup cabbage, shredded
    1cup carrot, shredded
    1/2 cup vegenaise (or more if you like "wetter" coleslaw)
    1/2 cup raisins
    1/8 cup chopped red onion
    1 tsp Xylitol (natural low-glycemic sweetener)
    1/2 large apple, cubed

Directions

Combine ingredients, stir. Chill for at least 1/2 hr. Enjoy!

Note: You can substitute sugar for the Xylitol if you don't want to buy it, but I recommend checking it out. Xylitol is metabolized independent of insulin, so it's safe for diabetics, or anyone looking to live a healthier, sugar-free lifestyle!

  • With only 3 and 1/8 cups of ingredients before the slaw is chilled and loses volume to water loss, a serving size is well under 1/2 cup. That is a very small serving size. Is the amount of cabbage correct? 3/4 c divided by 8 equals a very little bit of cabbage per person. - 6/19/08

    Gads! Something went wrong when I entered this recipe! Thanks for catching this. I entered the ingredients correctly for calculating the nutritional information, but typed it in wrong! I've changed the amounts now.

    The actual measurements are: 3 cups shredded cabbage and 1 cup shredded carrots.
