Introduction

This side dish is a great replacement for store-bought stuffing. It cooks up quicker and is a lot healthier. This recipe is also wheat free and vegan, but you could add parmesan cheese if you desired. This side dish is a great replacement for store-bought stuffing. Number of Servings: 4

Ingredients

    Rolled Oats (quick cooking), 1 cup
    Vegetable Broth, 2 cups (or chicken broth if you prefer, and I'd recommend low-sodium)
    Onions, dehydrated flakes, 2 tbsp
    Garlic powder, 1 tsp (or less if you desire)
    Salt, 1 tsp (or to taste)
    Pepper, black, 1 tsp (or to taste)
    Paprika, 1 tsp (I like smoked, but sweet is good, too)
    Parsley, dried, 2 tbsp (fresh works, too, but use less)

Directions

Bring broth to a boil. Add all other ingredients and cook until oatmeal is done, 1-2 minutes. Serve. Note: You can also add a little flour to the cooked oatmeal, form patties, and pan fry to make burgers.
