3 Bean Salad

Ingredients

    Ingredients
    •1/3 cup cider vinegar
    •3 tablespoons Splenda
    •1 tablespoon coarse-grained mustard
    •1 teaspoon canola oil
    •Freshly ground pepper, to taste
    •1 small red onion, diced
    •1 15-ounce can chickpeas, rinsed
    •1 10-ounce package baby lima beans, or shelled edamame
    •1 pound green beans, trimmed and cut diagonally into 1-inch pieces
    •2 tablespoons chopped fresh parsley or cilantro

Directions

Whisk vinegar, Splenda, mustard, oil, salt and pepper in a large bowl until blended. Add onion and chickpeas; toss to coat.

Blanch Edamame – pat dry
Blanch Green Beans – pat dry

Add to other salad ingredients and toss well with parsley (or cilantro)

Serves 6
