My Coconut Bran and Fig Muffins

Ingredients

    1/2 cup whole wheat flour
    1/4 cup Bob's Red Mill Organic Coconut Flour
    1 cup wheat bran
    1/3 cup whole flaxseed
    1/4 cup packed brown sugar
    1 tsp baking powder
    1/2 tsp bakign soda
    1 tsp ground cinnamon
    1 egg
    1 cup nonfat milk
    1/4 cup water
    2 Tbsp canola oil
    1 cup chopped figs

Directions

Preheat the oven to 375F. Spray or line 12 muffin cups.

In a large bowl, combine the flours through cinnamon. Make a well in the centre.

In a small bowl or measuring cup, beat together the egg, milk, water and oil. Add to dry ingredients, along with figs. Stir until just blended.

Spoon batter into prepared muffin tins. Bake in preheated oven for 20-25 minutes.

Makes 12 "regular-sized" muffins.
