Green Bean Salad

Introduction

Number of Servings: 4

Ingredients

    1 lb. green beans, cut in 1 inch lengths
    1 red pepper, seeded and chopped
    1 yellow pepper, seeded and chopped
    1 onion, chopped
    1 clove garlic, minced or press
    Juice of one lemon
    1 tbsp. vinegar
    1 tsp. dry dijon mustard(no salt added)
    Freshly ground pepper

Directions

Stam the green bens for 8 to 10 minutes. ( I used those new steaming bags for the micowave) Drain and combine with the red and yellow peppers, onion, garlic, and parsley. combine the loeon juice, vinegar, and mustard. Toss with the beans, adding pepper to taste. server warm or chilled. Makes 4 servings.
