IntroductionThis is your typical Mexican guacamole with just a little cumin powder to add some flavor. This is great to use on grilled chicken or in a sandwich instead of mayo or mustard. This is your typical Mexican guacamole with just a little cumin powder to add some flavor. This is great to use on grilled chicken or in a sandwich instead of mayo or mustard.
2 ripe medium sized avocados, pitted and smashed
The juice of half a fresh lemon
Salt and pepper, just a dash
1/2 tsp cumin powder (I know it says seeds but it didn't have powder in the ingredients list)
2 tbsp green onions or chives (green onions taste better)
1/4 cup super ripe tomatoes chopped
Pit them with the heel of your knife
Spoon out avocado and smash with fork in a bowl
Chop tomatoes into small cubes and add to avocado
Chop green onions into thin rounds and add to avocado and tomato mix
Add the juice of the lemon
Mix roughly with fork
Add salt, pepper and cumin powder.
Mix well and let chill for at least an hour.
Note: it can be eaten right away but letting it rest allows all flavors blend together.
Makes 8 - 10 servings
