2 Medium eggs
1 1/4 cups Quick Cooking Oats
1 1/2 tsp Baking Powder
1/2 cup Splenda
1 medium Apple, peeled grated
1 cup Fat Free Cottage Cheese
2 Tblspn Applesauce (non-sweetened)
1/2 tsp Cinnamon
3/4 cup Orange Juice
1 tsp Orange or Lemon Peel
Fold in apple, orange or lemon peel, cottage cheese, applesauce and Cinnamon adding a little water if too thick.
Spray a non stick skillet and for each pancake drop in 2 Tblspn of mixture and cook until bubbles appear on surface, turn over and cook other side. Repeat until 12 pancakes are cooked.
Serve with sugar free Maple syrup and mixed berries.
