Green Beans and Tomatoes

Introduction

An easy side; great in summer! An easy side; great in summer!
Number of Servings: 2

Ingredients

    200 grams green beans
    2 medium tomatoes, diced
    2 tbsp. olive oil
    3 cloves garlic, minced
    3/4 tbsp. balsamic vinegar
    Italian seasoning to taste

Directions

Throw the green beans in boiling water for two minutes, then dump the boiling water and run cold water over them twice.
Cook minced garlic in olive oil for 1-2 minutes. Add green beans for 1-2 minutes to warm. Add tomatoes and coat beans and tomatoes with oil mixture. Remove from heat and add Italian seasoning and balsamic vinegar.
Serve.

  • These were a bit twangy. Otherwise delicious. Reduce the vinegar to 2 Tbls. I used 1/2 tsp. of Italian seasoning and steamed beans 8 minutes. These would be good w/ mushrooms. - 9/30/10
