Dijon Pepper Steak

Ingredients

    2 tbsp cracked or coarsely ground mixed peppercorns
    1/4 tsp salt
    2 tbsp olive oil
    4 4 oz center-cut filet mignon steaks, about 1/4" thick
    1/4 cup fat-free, reduced-sodium beef broth
    3 tbsp red wine or 2 tbsp balsamic vinegar
    2 tsp Dijon mustard

Directions

Sprinkle peppercorns and salt on both sides of steaks and press in. Place large cast-iron or nonstick skillet over high heat for one minute. Add oil, lower heat to medium-high and place steaks in pan. Cook 5 minutes per side for medium-rare, 6 minutes for medium to medium-well. Remove steaks to large plate and tent with foil. Add broth and wine to skillet an simmer 30 seconds. Stir in mustard. Spoon sauce over steaks.
