2 tbls olive oil
1 Large onion
3 cloves garlic chopped
1 tbls chopped fresh ginger
1 1/2 lb extra lean ground beef
2 1/2 tsp ground coriander
2 1/2 tsp ground cumin
1/4 tsp black pepper
1/2 tsp turmeric
1/8 tsp cinnamon
1 1/2 tsp salt
1 lb potatoes cut into bite size pieces
1 cup fat free plain yogurt
3/4 cup fat free half and half
3/4 cup frozen peas
1 1/2 teaspoons lemon juice
1/2 cilantro chopped
Add ground beef and cook until no longer pink.
Add coriander, cumin, pepper, turmeric, cinnamon and salt. Cook for 1 minute, stirring.
Add potatoes, yogurt and half and half
bring to a gentle boil, cover and simmer for 20 minutes.
Uncover and simmer for a further 5 minutes add peas and continue to simmer until peas are heated though.
Stir in lemon juice and cilantro and serve over brown rice.
