Cristy 48 All Purpose Sauce

Introduction

I use this as a base for pasta. rice, meat, veggie dishes, soup, chili...possibilities are endless. Adds lots of veggie vitamins! I use this as a base for pasta. rice, meat, veggie dishes, soup, chili...possibilities are endless. Adds lots of veggie vitamins!
Number of Servings: 10

Ingredients

    1 TBS. olive oil
    1 cup sliced celery
    1 cup sliced carrots
    1 half cup chopped green pepper
    3/4 cup chopped onion
    3 sliced garlic cloves
    1-14.5 oz can tomatoes
    2-8 oz. cans no salt tomatoe sauce
    1-5.5 oz. can low sodium V8 juice

Directions

1). Saute' vegetables in olive oil untill desired doneness- I like mine "crispy".
2). Add tomatoes, sauce and juice.
3). Bring to a boil. Lower heat and simmer about 15 minutes.
This freezes well. I freeze 1/2 cup portions in snack size bags to use when needed.
Makes 10 servings, 1/2 cup each.
