This is soooo yummy. As tender as a filet, but without the price tag.(Note that the calorie count is somewhat inflated, since most of the marinade gets thrown away, rather than consumed.) This is soooo yummy. As tender as a filet, but without the price tag.

Ingredients

1 pound flat iron steak (top blade steak)
2 Tb olive oil
2 cloves garlic, crushed
1 t chopped Italian parsley (or 2 t dried parsley)
1 t dried chopped rosemary
1/4 cup red wine
1/2 t dried mustard
Directions
Mix all ingredients together. Marinate steak for 1 - 3 hours. Grill over hot coals, about 4 - 6 minutes per side. (In a George Foreman grill, 6 minutes gives a nice medium rare.) Serve in thin slices.
