Brown Rice, long grain, 1 cup Mayo, Fat Free , 4 tbsp Lemon Juice, 4 lemon yields Broccoli Florets, 2 cups Salmon, 24 oz Pepper, black, 1 tbsp
Prepare brown rice. Preheat broiler. Combine mayo, pepper & half of lemon juice. Place salmon on broiler pan skin side down & brush lemon pepper sauce over top. Broil salmon approx. 6 inches from heat source until salmon is cooked through and flakes easily (12-15 min). Steam broccoli 6-8 min. Place portion of salmon (6 oz) and rice (1/2 cup) on plate with a serving of broccoli (4 oz). Top with rest of lemon juice. Enjoy!
