Chicken Garlic Linguine

Introduction

This was a makeover recipe from "Taste of Home" and I made it over just a little bit more. If you want, you can substitute 1/2 cup white wine for 1/2 cup of the chicken broth. Ingredients

    1 pound linguine
    2 medium tomatoes
    1/4 cup all-purpose flour
    1/2 teaspoon salt
    1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
    1/4 cup olive oil, divided
    3 cups mushrooms
    5 garlic cloves, minced
    3/4 cup 98% fat free chicken broth
    1/4 cup minced fresh parsley
    1/2 teaspoon dried basil
    1/4 teaspoon salt
    1 teaspoon black pepper
    1/8 teaspoon crushed red pepper flakes

Directions

(1) Cook linguine according to package instructions. Chop tomatoes and set aside. In a large, resealable plastic bag, combine flour and garlic salt. Add chicken, a few pieces at a time, and shake to coat.

(2) In a large skillet, saute chicken in 2 tablespoons oil until no longer pink. Remove and keep warm. In the same sillet, saute mushrooms and garlic in remaining oil until tender. Add the broth, parsley, basil, salt, black pepper and red pepper flakes. Stir in the tomates and chicken; heat through.

(3) Drain linguine. add chicken mixture; toss to coat. May top with cheese - just count the calories!
