Vegetarian Lettuce Wraps

Introduction

Delicious and easy to prepare, this fun finger food is perfect for an informal dinner party. Delicious and easy to prepare, this fun finger food is perfect for an informal dinner party.
Number of Servings: 6

Ingredients

    2 cups fresh mushrooms, sliced
    2 cups zucchini, sliced
    cup Green Peppers (bell peppers), sliced
    cup Yellow Peppers (bell peppers), sliced
    cup Peppers, sweet, red, raw, sliced
    1 Cup Onions, sliced

    1 cups Bean sprouts

    Note: experiment with any fresh vegetables in season

    Garnish with:
    Thai or Asian Peanut Sauce, 1 tablespoon per wrap
    cup Carrots, grated
    1 cup Pistachio Nuts, shelled {slivered almonds are also good}

    24 Fresh Bibb Lettuce Leaves washed and dried

Directions

Heat olive oil in a skillet or wok and add mushrooms, zucchini, peppers and onions. Stir fry until just beginning to soften but still crunchy.

Remove from heat and stir in Bean Sprouts.

Place lettuce leaves on a plate,

Serve garnishes of grated carrots and pistachios in separate bowls

Place a line of stir-fired vegetables in center of lettuce leaf and top with carrots and pistachios and a drizzle of peanut sauce, then roll as you would a burrito or crpe.
