Apple Cobbler ~ Carb Friendly Variation Included

Ingredients

    6 apples peeled and thinly sliced
    1/4 c. unsweetened applesauce
    1 tsp vanilla extract
    1/2 tsp cinnamon
    non stick cooking spray

    Topping:
    1/2 cup quick cooking oats
    1/2 cup nuts, ground coarsely
    3 Tbsp Sugar or subsitute + 1 Tbsp of brown sugar
    1 tsp vanilla
    1 tsp cinnamon
    2 tbsp unsalted fat free marg cold and cut into pieces

Directions

Preheat oven to 350 degrees. Coat a 8 x 12 inch baking dish with non stick cooking spray.

Toss apple slices with appleasuce, vanill and cinnamon. Spread into baking dish.

In seperate bowl, mix together oats, nuts, sugar, vanilla, and cinnamon. Cut 1 Tbsp of marg into mixture and blend it til crumbly. (Add a little walnut oil if necessary.)

Crumble the oat/nut mixture over apples.
Dot the remaining margarine over the mixture.

Bake for 30-35 min. or until topping is golden and apples are bubbling.
Serve warm.

Makes 10 servings.

(This could be made sugar free by using sugar subsitute. Carb conversion then would be 14 g. of carbs per serving.)
