Teresa's Potato Salad

Number of Servings: 6

Ingredients

    2 cups diced red skin potatoes
    1 cup diced celery
    1 cup diced onion
    1/4 cup sweet pickle relish
    1/4 cup real mayonnaise
    1 tsp. salt
    1 tsp. black pepper

Directions

Place raw diced potatoes in a large pot and cover with cold water. Bring to a boil, reduce heat, and simmer for about 20 minutes, being careful not to boil dry or to stick to the bottom. Remove from heat as soon as tender but not soft. Drain, and cover with ice water to stop cooking. Drain, and add remaining ingredients. Toss, chill, and serve. Makes six 1/2 cup servings.
