Sweet & Sour Chicken

Introduction

Number of Servings: 4

Ingredients

    1 Tablespoon plus 2 Teaspoons soy sauce
    1 Tablespoon sherry
    1/2 Teaspoon salt
    1/2 Teaspoon garlic powder
    1/2 Teaspoon ground ginger
    1 Pound boneless, skinless chicken breast, cubed
    1 Can (20 oz) unsweetened pineapple chunks
    2 Tablespoons plus 1/3 cup cornstarch, divided
    1/4 Cup cider vinegar
    1/4 Cup ketchup

Directions

1. In a large, resealable plastic bag, combine 1 tablespoon soy sauce, the sherry, salt, garlic powder and ginger; add the chicken. Seal bag and shake to coat. Set aside.

2. Drain pinapple, reserving juice; set pineapple aside. In a small bowl, combine 2 tablespoons cornstarch, sugar and pineapple juice. Mix until smooth; stinr in the vinegar, ketchup and remaining soy sauce. Set aside.

3. Drain chicken and discard remaining marinade. In a new resealable bag, add remaining cornstarch. Add chicken, a few pieces at a time, and shake to coat. Spray a skillet or wok with Pam or something similar. Stir-fry chicken until no longer pink. Remove and keep warm.

4. Stir pineapple juice mixture and add to the pan. Bring to a boil; cook and stir continuously for 2 minutes or until thickened. Add chicken and reserved pineapple chunks; heat through.

Makes 4 1-cup servings. Great with brown rice!
