2 medium zucchinis, sliced info halves
1 cup grape tomatoes, sliced in half
3 TBSP olive oil, divided
1 boz Barilla Plus Penne
1 1/2 salt, divided
15 fresh basil leaves, coarsely chopped or sliced into ribbons
1/4 cup grated parmesan cheese
Heat 2 TBSP oil in a large fry pan
Fry zucchini slices to golden brown on both sides (do in two batches so they are not over crowded in pan). Drain on a paper towel.
Meanwhile, cook pasta according to the package directions.
Combine cooked pasta, zucchini, tomatoes, 1/2 tsp salt, remaining olive oil and basil in a large serving bowl.
Sprinkle with parmesan.
