Ingredients

    15 eggs
    3 turkey sausage breakfast links
    1 cup lowfat mozz cheese
    1/4 cup diced eggplant
    1/4 diced cherry tomatoes
    1/2 cup pace picante sauce
    1/4 diced green onion
    mrs. dash and morton's seasonings

Directions

Mix all ingredients pour into silicon muffin pans. Bake 375 for 20 to 25 minutes. Makes 16 egg muffins...Easy and fast
